Holidays are a special time of year. I love the food at Thanksgiving and Christmas, all the pretty lights and spending time with friends and family. I recently discovered the following recipe, and thought I would share it with you. It's easy enough to cook in your crockpot, and it will surely be a hit!
Slow Cooker Apple Pumpkin Pudding
Ingredients:
2 medium apples, diced
15 oz. can pumpkin puree
5 oz. can evaporated milk
1/3 c. brown sugar
1 Tbsp. pumpkin pie spice
1 box spice cake mix
4 Tbsp. butter
1/2 c. rolled oats
1/2 c. chopped walnuts (optional)
Instructions:
Put apples in the bottom of the crockpot. In a mixing bowl, whisk pumpkin puree, evaporated milk, brown sugar and pumpkin pie spice. Pour the mixture over the apples. In a separate bowl, stir cake mix, walnuts and oats. Sprinkle over crockpot ingredients. Melt butter and drizzle over cake mix. Cook on high 2 1/2 hours. Turn off crockpot, remove lid and let sit in crockpot for another 15-20 minutes.
*I like to top with caramel sauce and ice cream. Enjoy!!!
